Dear Post Office, thanks for being closed one and a half hours during lunch and then closing at 4:30 so no one who works can pick up a package. All I wanted was my Girl Scout Cookies! Also thanks for being rude to me through the door. Vent over.

Bellies of Burlington: Photo Submission #2

This belly belongs to one of my best friends Justine. As you can see, she has a really great scar on her side and with every scar comes a story. Justine had hip replacement surgery last year and is about to have her other replaced next month. Justine loves her scars, they make her who she is. Thanks Justine for sharing!

Thanks Corey! Everyone should embrace all of their scars and all the things that make them unique.

Birding Excursion

Today a few of us from GMD / @Audubon Guides went birding with one of our bloggers/Naturalists Kent McFarland.  I learned I am not such a bad birder.  Yes, I only saw/heard these birds because of Kent but I was able to ID a few of them and learned a few new calls.  I  was especially excited to see and correctly identify the Hooded Merganser and her young.  I have been anxious to add this bird to my life list.  Some of these birds are extremely beautiful and I would recommend taking a look here.  

Location: Billings Farm/River Road

Bird List 6/2 7am

Birds Seen: 

Green  Heron

Red-winged Blackbird

Eastern Kingbird

Yellow Goldfinch

Hooded Merganser - female 2 ducklings

Baltimore Oriole

American Robin

Canada Goose - 2

American Crow

Cedar Waxwing

Yellow-bellied Sapsucker

Birds Heard:

Indigo Bunting

Belted Kingfisher

Black-capped Chickadee

Red-eyed  Vireo

Black-and-white Warbler

Scarlet Tanager

(We heard more, but here is what I could remember)


Dec 1
1 Cup Rice
1/3 bag frozen stir fry veggies
Dijon Mustard
Honey
Soy Sauce
To Make:
Cook the rice.  Then cook veggies.  When they are warmed add some soy sauce.  Then add equal amount Dijon Mustard & Honey.  Add the soy sauce, honey, and dijon mustard to taste. 

Quick and easy!

1 Cup Rice

Cooking for 1 can be extremely difficult & wasteful.  Just moving out on my own at the beginning of the summer I am still attempting to perfect what to buy and how much to cook.  Here is a simple dinner I made the other night when I really did not want to cook. 
1 Box Near East Rice Pilaf (Garlic & Herb) 
1 Can of Corn
1 Avocado
This is enough for 1 person and for the next days lunch.  Simple and delicious.

Loaded Nachos with:

Chicken, Cheese, Onions, Peppers, Black Beans, Re-fried Beans, Corn, Salsa & Avocado Dip

Tacos with:

Re-fried Beans, Black Beans, Corn, Onions, Peppers, Cheese Salsa, Sour Cream, & Avocado Dip

To Make Avocado Dip:

2 Ripe Avocados, Lime Juice, Garlic, Peppers, & Onion
